Chile Relleno

    Prepare the Peppers

    Roast the poblano peppers over an open flame or in a broiler until the skin is charred. Place them in a plastic bag for 10 minutes to steam, then peel off the skin and remove the seeds.

    Fill each roasted poblano pepper with shredded Monterey Jack cheese, ensuring they are well-stuffed, but not overfilled.

    Make the Batter

    In a bowl, beat the eggs with milk and salt. Gradually fold in the flour until a thick batter forms.

    Fry the Peppers

    Heat vegetable oil in a deep skillet over medium heat. Dip each stuffed pepper into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry until golden brown on all sides, approximately 5-7 minutes. Drain on paper towels.

    Top with Sauces

    Place the fried peppers on a serving plate, drizzle with ranchera and chipotle sauces, and sprinkle additional Monterey Jack cheese on top.

    In a skillet over medium heat, add ground beef and cook until browned. Drain excess fat and stir in taco seasoning, cooking for an additional 5 minutes.

Refried Beans
