Chicken And Chorizo Burrito Recipe
A 12” flour tortilla filled with chicken, chorizo, and grilled onions. Topped with our chile con queso and more chorizo. Served with Spanish rice and refried beans.

Prepare the Filling

Cook the Chorizo
In a large skillet over medium heat, add the chorizo. Cook for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.

Combine Ingredients
Once the chicken is cooked, add the cooked chorizo back into the skillet. Stir well to combine all ingredients. Cook for an additional 2 minutes to allow flavors to meld together.
Assemble the Burritos

Prepare the Tortillas
Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side to make them pliable.

Fill the Tortillas
Place a generous amount of the chicken and chorizo mixture in the center of each tortilla. Fold the sides over and roll tightly from the bottom to create a burrito.

Top with Chile con Queso
Place the filled burritos on a serving plate and drizzle with chile con queso. Add additional cooked chorizo on top for garnish.

Prepare Spanish rice according to package instructions. Typically this involves cooking rice in water with seasoning.
