Preparation

  1. 1

    Marinate the Chicken

In a bowl, combine the olive oil, minced garlic, chopped fresh rosemary, lemon juice, salt, and black pepper. Mix well to create a marinade. Add the chicken breasts and coat them thoroughly. Cover and let marinate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

While the chicken is marinating, prepare the vegetables. Trim the ends of the asparagus and cut the cherry tomatoes in half. Set them aside.

Cooking

  1. 3

    Cook the Chicken

Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for a few minutes.

  2. 4

    Roast the Vegetables

In a separate pan, add the asparagus and cherry tomatoes. Drizzle with balsamic vinegar and a pinch of salt. Roast in the oven at 400°F (200°C) for about 15 minutes or until tender.

  3. 5

    Serve

Slice the chicken breasts and plate them. Add the roasted asparagus and cherry tomatoes on the side. Grate fresh Parmesan cheese over the vegetables before serving.
