Cook the Fajita Meat (Optional)
If using chicken or beef fajita meat, cook it in a skillet over medium heat until heated through, about 5-7 minutes. Season with salt and black pepper to taste.

Prepare the Tortillas
Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil or butter. Allow it to melt and coat the bottom of the skillet.

Assemble the Quesadilla
Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly on top of the tortilla. If using, add the cooked fajita meat on top of the cheese, followed by the remaining cheese. Top with the second tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side until golden brown and crispy.

Cut and Serve
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut it into wedges and serve with a side of French fries, sour cream, and salsa.
