Prepare the Filling
In a mixing bowl, combine the grilled steak, jalapeño cream cheese, Monterey Jack cheese, and pico de gallo. Mix well until all ingredients are evenly distributed.

Assemble the Enchiladas
Take a flour tortilla and spoon a generous amount of the filling mixture onto the center. Roll the tortilla tightly to encase the filling and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

Make the Sauce
In a small bowl, combine sour cream, chipotle peppers in adobo sauce, and lime juice. Mix until smooth and well-blended. Set aside.
Cooking and Serving

Bake the Enchiladas
Preheat the oven to 350°F (175°C). Pour half of the chipotle cream sauce over the enchiladas in the baking dish. Bake for 20 minutes or until heated through.

Garnish and Serve
Once baked, remove the enchiladas from the oven and drizzle the remaining chipotle cream sauce over the top. Slice the avocado and arrange it on top. Serve with a side of black beans and rice.
