Steak Preparation

    Season the Steak

    Rub the ribeye steaks with olive oil, salt, and black pepper on both sides. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

    Sear the Steak

    Heat a large skillet (preferably cast iron) over medium-high heat. Once hot, add the steaks to the skillet. Sear for about 4-5 minutes on one side until a nice crust forms.

    Add Aromatics

    Flip the steaks and add garlic cloves and rosemary to the skillet. Continue to cook for another 4-5 minutes for medium-rare, basting the steaks with the melted fat and aromatics.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing. This allows the juices to redistribute.

Frites Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into uniform sticks (about 1/4 inch thick). Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 325°F (163°C). Use a thermometer to ensure the oil reaches the correct temperature.

    First Fry

    Drain the soaked potatoes and dry them thoroughly with paper towels. Fry the potato sticks in batches for about 4-5 minutes until they are soft but not colored. Remove them from the oil and drain on paper towels.

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the potatoes in batches again for about 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt immediately.
