Prepare the Potatoes
Wash and peel the potatoes. Cut them into fry shapes, about 1/4 inch thick.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil in batches. Fry for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt.

Cook the Ground Beef
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

Add Remaining Ingredients
Stir in the canned diced tomatoes, chili powder, cumin, salt, black pepper, and kidney beans. Bring to a simmer, then reduce heat to low and cook for 20 minutes, stirring occasionally.
Assemble

Combine and Serve
On a serving plate, place a generous portion of fries. Top with the hot chili mixture and sprinkle with shredded cheddar cheese. Serve immediately.
