Cooking Instructions

  1. 1

    Prepare the Marinade

In a bowl, mix together olive oil, minced garlic, lemon juice, rosemary, salt, and black pepper to create a marinade.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a zip-lock bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  4. 4

    Roast the Chicken

Place the marinated chicken breasts on a baking sheet and roast in the oven for 25-30 minutes, or until the chicken is cooked through.

  5. 5

    Prepare the Vegetable Medley

While the chicken is roasting, chop the vegetable medley into bite-sized pieces. Toss them in olive oil, salt, and pepper, and spread them out on another baking sheet.

  6. 6

    Roast the Vegetables

Add the vegetable medley to the oven during the last 15 minutes of the chicken roasting time. Roast until tender and slightly caramelized.

  7. 7

    Serve

Once the chicken and vegetables are done, remove them from the oven. Serve the chicken topped with grated Parmesan cheese and alongside the roasted vegetables.
