Prepare the Dough
In a large bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a dough forms. Knead the dough for about 5-7 minutes until it is smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
While the dough is resting, rinse and chop the fresh spinach. In a bowl, combine the chopped spinach, crumbled feta cheese, and black pepper. Mix well and set aside.

Roll Out the Dough
After the dough has rested, divide it into 4 equal pieces. On a floured surface, roll out each piece into a thin circle (about 10-12 inches in diameter).

Assemble the Gozleme
Place a quarter of the spinach and feta filling on one half of each rolled-out dough. Fold the other half over to create a semi-circle and press the edges to seal.

Cook the Gozleme
Heat a non-stick skillet or griddle over medium heat. Cook each gozleme for about 3-4 minutes on each side until golden brown and crispy. Remove from heat and cut into wedges.

Serve
Serve the gozleme warm with tzatziki sauce on the side and the prepared house salad.
