Falafel Preparation

    Soak the Chickpeas

    Soak the dried chickpeas in water overnight (or for at least 8 hours) until they are doubled in size.

    Prepare the Mixture

    Drain the soaked chickpeas and add them to a food processor along with parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, scraping down the sides as needed.

    Form the Falafel Balls

    Transfer the mixture to a bowl and refrigerate for about 30 minutes. Once chilled, shape the mixture into small balls or patties.

    Heat the Oil

    In a deep frying pan, heat enough vegetable oil to submerge the falafel balls over medium-high heat.

    Fry the Falafel

    Once the oil is hot, carefully drop the falafel balls into the oil in batches, frying them until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve

    Serve the falafel warm with tahini sauce drizzled on top or on the side.
