Prepare the Old Bay Mayo
In a small bowl, mix together the mayonnaise and Old Bay seasoning until well combined. Set aside.

Cook the Chicken
Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until cooked through and juices run clear. Alternatively, grill the chicken on a preheated grill for 6-7 minutes on each side.

Prepare the Vegetables
While the chicken is cooking, slice the tomato and wash the lettuce leaves.

Assemble the Sando
Once the chicken is cooked, let it rest for a few minutes. Then, on each piece of bread, spread a generous amount of Old Bay mayo, add a piece of chicken, top with lettuce and tomato slices, and finish with another piece of bread.

Serve
Cut the sandwiches in half if desired, and serve immediately.
