Fried Chicken Slider Directions
Marinate Chicken
In a bowl, combine the buttermilk, Old Bay seasoning, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare Old Bay Mayo
In a small bowl, mix the mayonnaise with 1 teaspoon of Old Bay seasoning. Adjust seasoning to taste.
Dredge Chicken
Remove the chicken from the marinade and allow excess buttermilk to drip off. In a shallow dish, add the flour and remaining Old Bay seasoning. Dredge each piece of chicken in the flour mixture, ensuring an even coating.
Fry Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the chicken pieces. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a thermometer to check that the internal temperature reaches 75°C (165°F).
Assemble Sliders
Drain the fried chicken on paper towels. To assemble, place a piece of fried chicken on each slider bun, add a lettuce leaf, a slice of tomato, and a generous dollop of Old Bay mayo. Top with the other half of the bun.
Serve
Serve the sliders warm, with extra Old Bay mayo on the side if desired.
