In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper.

Combine wet and dry ingredients
Gradually add the wet mixture to the dry ingredients, stirring until a smooth batter forms.

Preheat the oil
In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the cheese curds
Dip each cheese curd into the batter, ensuring it is fully coated.

Fry the cheese curds
Carefully drop the coated cheese curds into the hot oil in batches. Fry until golden brown, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.

In a medium bowl, whisk together the mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper until smooth.
