Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Butter and Chocolate

In a medium saucepan, melt the unsalted butter and semi-sweet chocolate chips over low heat, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Eggs and Sugar

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale.

  4. 4

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly to combine.

  5. 5

    Add Remaining Ingredients

Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Do not overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate to release the cake. Serve immediately with a scoop of vanilla ice cream on the side.
