Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Soak in Buttermilk
Pour the buttermilk into another bowl. Dip the calamari rings into the buttermilk, allowing excess to drip off.

Coat the Calamari
Dredge the buttermilk-soaked calamari rings in the flour mixture until well coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches, about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, dried oregano, salt, black pepper, fresh basil, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally until it thickens slightly.
