Method
Prepare the Sashimi

Arrange the yellowtail, shrimp, eel, albacore, tuna, and salmon sashimi on a platter. Make sure to slice the sashimi thinly for a delicate presentation.
Make the California Roll

Prepare Sushi Rice
In a large bowl, combine the cooked sushi rice with rice vinegar and mix gently. Allow it to cool to room temperature.

Assemble the Roll
Place a nori sheet on a bamboo sushi mat. Wet your hands to prevent sticking and spread about 1/2 cup of sushi rice over the nori, leaving a small border at the top.

Fill the Roll
Place a line of imitation crab meat, julienned cucumber, avocado slices, and mayonnaise in the center of the rice-covered nori.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, compressing the filling tightly. Seal the edge with a little water.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top if desired.
Serve the Platter

Arrange the California rolls on the platter alongside the sashimi. Serve with soy sauce, wasabi, and pickled ginger on the side.
