    Chop the Vegetables

    Chop the onion, celery, and dice the potatoes. Set aside.

    Prepare the Clams

    If using canned clams, drain and chop them. If using fresh clams, clean and chop them after cooking.

Cooking

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and celery, and sauté until translucent, about 5 minutes.

    Add Potatoes and Broth

    Add the diced potatoes, broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

    Incorporate Clams and Cream

    Stir in the chopped clams, heavy cream, and milk. Heat through but do not boil, about 5 minutes.

Serving

    Garnish and Serve

    Remove the bay leaf, ladle the chowder into bowls, and garnish with chopped parsley. Serve hot.
