Preparing the Fish

    In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water while stirring to create a smooth batter. It should be thick enough to coat the fish.

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Coat the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully lower the batter-coated fish fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
