Preheat your oven to 425°F (220°C) if you are baking the fish sticks.

Cut the fish fillets into stick-shaped pieces, about 1 inch wide and 3-4 inches long.

Prepare the Fish

Set up three shallow dishes: one with flour mixed with salt, pepper, and garlic powder; one with beaten eggs; and one with breadcrumbs mixed with paprika.

Set Up Breading Station

Dredge each fish stick in the flour mixture, shaking off the excess. Then dip into the beaten eggs, allowing any excess to drip off, and finally coat with the breadcrumb mixture, pressing gently to adhere.

Bread the Fish

Place the breaded fish sticks on a baking sheet lined with parchment paper. Drizzle or spray lightly with olive oil.

Arrange on Baking Sheet

Bake in the preheated oven for 15-20 minutes, turning halfway through, until golden brown and cooked through.

Bake the Fish Sticks

Remove from the oven and serve hot with your favorite dipping sauce.
