Preparing the Fries

    Cut the Potatoes

    Peel the Russet potatoes and cut them into thick fries, about 1/4 inch wide.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    Dry the Fries

    Drain the fries and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches for about 5-6 minutes until they are golden and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until smooth and well combined.

    In another pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each cod fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully lower the battered fish into the hot oil and fry for about 4-5 minutes, or until the batter is golden brown and the fish is cooked through. Remove with a slotted spoon and drain on paper towels.

Optional Tartar Sauce

    In a small bowl, combine mayonnaise, finely chopped dill pickles, lemon juice, and capers. Stir until well mixed.
