Method

Prepare the Chips

  1. 1

    Cut the Potatoes

Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

  3. 3

    Preheat the Oil

In a large pot or deep fryer, heat the oil to 350°F (175°C) while the potatoes are soaking.

  4. 4

    Fry the Chips

Drain the potatoes and pat them dry with paper towels. Fry the potatoes in the hot oil in batches until golden brown and crispy, about 5-7 minutes per batch.

  5. 5

    Season the Chips

Remove the chips from the oil and place them on paper towels to drain. Sprinkle with salt while they are still hot.

Prepare the Fish

  1. 6

    Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and lump-free.

  2. 7

    Coat the Fish

Pat the cod fillets dry with paper towels and dip each fillet into the batter, ensuring it is fully coated.

  3. 8

    Fry the Fish

Carefully place the battered fish fillets into the hot oil. Fry each piece for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve

  1. 9

    Plate the Dish

Serve the fish alongside the chips on a plate. Add lemon wedges and a side of tartar sauce for dipping.

  2. 10

    Add Vinegar

Drizzle with vinegar over the chips for added flavor if desired.
