Preparation of the Custard

Heat the Cream
In a saucepan over medium heat, combine 2 cups of heavy cream and 1 cup of granulated sugar. Stir until the sugar dissolves. Split the vanilla bean in half lengthwise, scrape out the seeds, and add both the seeds and the pod to the cream mixture. Heat until it just begins to simmer, then remove from heat.

Whisk Egg Yolks
In a mixing bowl, place 5 large egg yolks. Whisk them gently until they are combined and slightly thickened.

Bake in Water Bath
Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Carefully place the dish in the preheated oven and bake for approximately 30-35 minutes, or until the custard is set but still slightly wobbly in the center.

Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover them with plastic wrap and refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Just before serving, sprinkle 1 tablespoon of granulated sugar over the surface of each chilled custard. Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. If you don't have a torch, you can place the ramekins under the broiler for a few minutes, watching closely to prevent burning.
