Main Dish Preparation

    Marinate the Fish

    In a bowl, combine lemon juice, olive oil, minced garlic, salt, and black pepper. Add the fish fillets and coat them in the marinade. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the fish is marinating, prepare the cherry tomatoes by halving them and chopping the fresh parsley. Set aside.

    Cook the Fish

    Heat a grill or skillet over medium heat. Remove the fish from the marinade and grill for about 3-4 minutes on each side, or until cooked through and flaky. During the last minute of cooking, add the cherry tomatoes and chopped parsley to the pan to warm them through.

    Cook the Potatoes

    In a pot of salted boiling water, add the halved new potatoes. Cook for about 15-20 minutes, or until tender. Drain and return to the pot.

    Finish the Potatoes

    Add butter, chopped fresh dill, salt, and black pepper to the potatoes. Toss until the potatoes are coated in the butter and herbs.

Plating

    Serve the Dish

    On a plate, serve a portion of the grilled fish topped with the warm cherry tomatoes and parsley. Add a side of the buttered new potatoes. Garnish with additional fresh parsley if desired.
