Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method). Stir until smooth and let it cool slightly.

Separate the Eggs
Separate the egg yolks and egg whites. Place yolks in a large mixing bowl and the whites in a separate bowl.

Whisk Egg Yolks and Sugar
Add the granulated sugar to the egg yolks and whisk until the mixture is pale and creamy.

Combine Chocolate and Egg Mixture
Slowly fold the melted chocolate into the egg yolk mixture until well combined. Add a pinch of salt and vanilla extract.

Whip Egg Whites
Using an electric mixer, whip the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip Heavy Cream
In another bowl, whip the 300 ml of heavy cream until soft peaks form. Gently fold this into the chocolate mixture until fully incorporated.

Chill the Mousse
Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.

Whip the Cream
In a mixing bowl, whip the 150 ml of heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Serve
Once the mousse is set, top each serving with a dollop of whipped cream before serving.
