Method

Prepare the Batter

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, shaking out the excess.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the chopped semi-sweet chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring after each interval until completely melted and smooth.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together all-purpose flour, granulated sugar, cocoa powder, and salt until well combined.

  4. 4

    Combine Mixtures

Add the melted chocolate mixture to the dry ingredients and mix until just combined.

  5. 5

    Add Eggs

Add the whole eggs, egg yolks, and vanilla extract to the mixture. Whisk until smooth and well incorporated.

Bake the Cakes

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.

  3. 8

    Cool Briefly

Remove the ramekins from the oven and let them cool for about 1 minute.

Serve

  1. 9

    Plate the Cakes

Carefully invert each ramekin onto a plate to release the cake. Dust with powdered sugar.

  2. 10

    Add Ice Cream

Serve each cake warm with a scoop of vanilla ice cream on the side.
