Calamari

Method

Prepare the Marinara Sauce

    Heat the oil

    In a saucepan, heat 2 tablespoons of olive oil over medium heat.

    Sauté garlic

    Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add tomatoes and seasonings

    Add the crushed tomatoes, dried oregano, sugar, salt, and black pepper to the saucepan. Stir to combine.

    Simmer the sauce

    Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

    Finish the sauce

    Stir in the chopped fresh basil just before serving. Set aside.

Prepare the Calamari

    Prepare the breading

    In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and paprika.

    Beat the eggs

    In another bowl, beat the two eggs until well combined.

    Bread the calamari

    Dip each calamari ring into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Ensure they are evenly coated.

    Heat the oil

    In a large skillet, heat 2 cups of olive oil over medium-high heat until shimmering.

    Fry the calamari

    Carefully add the breaded calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

    Arrange the fried calamari on a serving plate.
