Crust Preparation

Mix the crust ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even layer.

Bake the crust
Preheat your oven to 350°F (175°C). Bake the crust for 8-10 minutes, or until golden brown. Remove from the oven and allow to cool.

Prepare the filling
In a large mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and well combined.

Pour the filling into the crust
Once the crust has cooled, pour the key lime filling into the prepared crust, spreading it evenly.

Bake the pie
Bake the pie in the preheated oven for 15 minutes. Remove and allow to cool at room temperature for 1 hour, then refrigerate for at least 3 hours or until set.

Make the whipped cream
In a mixing bowl, beat the heavy whipping cream and powdered sugar with an electric mixer until soft peaks form.

Gently fold in the lime zest into the whipped cream.
