Fish Preparation

Prepare the Battering Mixture
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, paprika, and cayenne pepper. Mix well.

Add Beer
Gradually whisk in the beer (or sparkling water) until the batter is smooth and slightly thick.

Heat Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until hot.

Dip and Fry Fish
Cut the fish fillets into strips. Dip each strip into the batter, letting the excess drip off, and carefully place into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
Slaw Preparation

In a large bowl, combine the shredded cabbage, shredded carrot, and chopped cilantro.

Add Dressing
Drizzle lime juice over the slaw, and season with salt and black pepper. Toss well to combine. Set aside to let flavors meld.
Chipotle Sauce Preparation

Combine Sauce Ingredients
In a small bowl, mix together mayonnaise, finely chopped chipotle peppers, lime juice, and garlic powder until smooth. Adjust seasoning to taste.
Assembling Tacos

Warm Tortillas
Heat the soft corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warmed.

Assemble Tacos
On each tortilla, place a few pieces of crispy fish, followed by a generous helping of slaw, and drizzle with chipotle sauce. Serve immediately.
