Method

Prepare the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1-2 minutes.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh basil just before serving.

Prepare the Calamari

    Prepare the Breading Mixture

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

    Whisk Eggs and Milk

    In a separate bowl, whisk together the eggs and milk until well combined.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Dip the calamari rings into the egg mixture, letting any excess drip off, then coat them in the flour mixture, ensuring they are evenly covered.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, frying for 2-3 minutes or until golden brown. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
