Preparing the Marinara Sauce

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer, then reduce the heat to low.

Simmer the Sauce
Let the sauce simmer for about 20 minutes, stirring occasionally. Adjust seasoning to taste if necessary.
Preparing the Calamari

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Coat the Calamari
Pour buttermilk into another bowl. Dip each calamari ring into the buttermilk, then dredge it in the flour mixture, ensuring it is evenly coated.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, carefully add the breaded calamari rings to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the crispy calamari hot with the marinara sauce on the side for dipping.
