Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water, removing any insides and tough skin. Cut the calamari into rings.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 375°F (190°C).

Coat the Calamari
Dip the calamari rings first into the egg wash, then dredge them in the flour mixture until well-coated.

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
