Wild AK Salmon

    Prepare the Salmon

    Preheat your grill or oven to medium-high heat. Rub the salmon fillets with olive oil, and season with salt and black pepper.

    Cook the Salmon

    Place the salmon fillets on the grill or in the oven. Cook for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

Pineapple Shoyu Reduction

    Combine Ingredients

    In a saucepan, combine pineapple juice, soy sauce, brown sugar, and grated ginger.

    Simmer the Sauce

    Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for about 15 minutes, or until the sauce has thickened slightly.

    Strain the Sauce

    Remove from heat and strain the sauce through a fine-mesh sieve to remove the ginger pieces. Set aside.

Basmati Cilantro-Lime Pilaf

    Cook the Rice

    In a pot, combine basmati rice and water. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes, or until the rice is tender and water is absorbed.

    Fluff and Add Flavors

    Remove the pot from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and mix in chopped cilantro, lime zest, and lime juice.

Baby Bok Choy

    Prepare the Bok Choy

    Wash the baby bok choy thoroughly and slice them in half lengthwise.

    Sauté the Bok Choy

    In a skillet, heat sesame oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the bok choy and cook for about 4-5 minutes until tender.

Mango Salsa

    Combine the Salsa Ingredients

    In a bowl, mix together the diced mango, chopped red onion, chopped cilantro, lime juice, and salt.

    Chill the Salsa

    Let the salsa sit for at least 10 minutes to allow flavors to meld before serving.
