Entrees

  1. 1

    Prepare the Base

In a large pot or Dutch oven, heat the olive oil over medium heat.

  2. 2

    Sauté Vegetables

Add the diced yellow onion, diced fennel, and minced garlic to the pot. Sauté until the onion is translucent and the fennel is tender, about 5-7 minutes.

  3. 3

    Add Tomatoes and Liquid

Stir in the crushed tomatoes, fish stock (or clam juice), and dry white wine. Bring to a simmer.

  4. 4

    Season the Broth

Add the dried oregano, red pepper flakes, salt, and black pepper to the pot. Adjust seasoning to taste.

  5. 5

    Add Seafood

Once the broth is simmering, gently add the chunks of Alaskan fin fish, scallops, and prawns to the pot.

  6. 6

    Simmer the Cioppino

Cover the pot and simmer for 10-15 minutes, until the seafood is cooked through and opaque.

  7. 7

    Garnish and Serve

Ladle the cioppino into bowls, garnish with chopped fresh parsley, and serve hot with crusty bread on the side.
