Oysters Preparation

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Oysters
Carefully shuck the Alaskan oysters and place them on a baking sheet. Make sure to keep the oyster liquid in the shells.

Make the Gratin Topping
In a bowl, combine grated Parmesan cheese, crumbled bacon, breadcrumbs, minced garlic, chopped parsley, and black pepper. Mix well until combined.

Top the Oysters
Spoon the gratin mixture evenly over each oyster, ensuring they are well-covered.
Citrus Beurre Blanc Preparation

Sauté Shallots
In a saucepan over medium heat, add the finely chopped shallots and sauté until translucent.

Add Wine and Citrus Juices
Pour in the white wine, lemon juice, and orange juice. Bring to a simmer and reduce until the mixture is about 2 tablespoons.

Incorporate Butter
Lower the heat and whisk in the unsalted butter, piece by piece, until the sauce is smooth. Season with salt.
Roasting and Serving

Place the baking sheet with the topped oysters in the preheated oven. Roast for about 10-12 minutes or until the topping is golden brown and the oysters are cooked through.
