Poach the Pears
Peel and core the pears, then gently place them in the boiling water mixture. Reduce heat and let them simmer for about 15-20 minutes, or until tender. Remove the pears and let them cool.

Prepare the Honey Tabasco Dressing
In a small bowl, whisk together 2 tablespoons of honey and 1 teaspoon of Tabasco sauce until well combined. Adjust spiciness to taste.

Assemble the Salad
In a large salad bowl, add 4 cups of mixed greens. Crumble 1 cup of Gorgonzola cheese and sprinkle it over the greens, followed by 1 cup of candied pecans.

Add the Poached Pears
Slice the cooled poached pears and arrange them on top of the salad.

Drizzle the Dressing
Pour the Honey Tabasco dressing over the salad and toss gently to combine all ingredients.
