Prepare the Lettuce
Wash and dry the romaine lettuce thoroughly. Chop it into bite-sized pieces and place it in a large salad bowl.

Make the Dressing
In a small bowl, combine the anchovy paste, minced garlic, olive oil, lemon juice, and Dijon mustard. Whisk together until smooth. Season with salt and black pepper to taste.

Toss the Salad
Pour the dressing over the chopped romaine lettuce. Toss well to ensure all the leaves are coated with the dressing.

Add Cheese and Olives
Add the shredded Parmesan cheese and chopped black olives to the tossed salad. Mix gently to incorporate.

Top with Crostini
Just before serving, add crostini on top of the salad to provide a crunchy texture.
