Soup Preparation

1

Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and diced jalapeño, cooking for an additional 2 minutes until fragrant.

2

Add Tomatoes and Broth

Pour in the canned diced tomatoes with their juice and the vegetable broth. Stir to combine.

3

Season the Soup

Add the ground cumin, smoked paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer.

4

Incorporate Beans and Corn

Add the corn kernels and black beans to the pot. Simmer for about 15 minutes, stirring occasionally.

5

Finish with Cilantro

Stir in the chopped cilantro just before serving.

Tortilla Preparation

6

Fry Tortillas

In a large skillet, heat the oil over medium-high heat. Cut each corn tortilla into strips or wedges and fry them in batches until golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.

Lime Crema Preparation

7

Make Lime Crema

In a small bowl, combine the sour cream, lime juice, and lime zest. Mix until well combined. Adjust seasoning with salt if necessary.
