Mussels Preparation

Clean the Mussels

Rinse the fresh mussels under cold water and scrub the shells to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

Cook the Chorizo

In a large pot over medium heat, add the chorizo sausage. Cook until browned and fully cooked, about 5-7 minutes. Break it apart with a wooden spoon as it cooks.

Add Mussels and Cream

Add the cleaned mussels to the pot with the cooked chorizo. Pour in the heavy cream and cover the pot. Cook for 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

Add Corn and Cilantro

Once the mussels are cooked, stir in the corn and half of the chopped cilantro. Cook for an additional 2 minutes until heated through. Season with salt and pepper to taste.

Grill the Sourdough

While the mussels are cooking, heat a grill pan over medium heat. Brush each slice of sourdough bread with olive oil on both sides. Grill the bread for about 3-4 minutes on each side until golden brown and crispy.
