    Prep the chicken

    Pound each chicken breast to an even 1/2-inch thickness using a meat mallet or rolling pin. If breasts are large, halve them horizontally into two thinner cutlets so you have two sandwich-sized pieces.

    Brine in buttermilk

    Place the flattened chicken pieces in a shallow bowl and pour 1 cup buttermilk over them to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours) to tenderize and flavor the chicken.

    Make the dredge

    In a wide shallow dish combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt and 1/2 tsp black pepper. Mix thoroughly so spices are evenly distributed.

    Heat the oil

    Pour about 1 cup vegetable oil into a 10-12 inch skillet to reach about 1/3 inch depth. Heat the oil over medium-high heat until it reaches 350°F (175°C) or until a small pinch of flour sizzles on contact.

    Dredge and fry

    Remove a piece of chicken from the buttermilk, letting excess drip off. Press it firmly into the flour mixture, coating both sides and edges; shake off excess. Carefully lay the chicken into the hot oil. Fry 3-4 minutes per side until golden brown and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Do not overcrowd; fry in batches if needed.

    Assemble sandwiches

    Lightly toast the hamburger buns in a dry skillet or under a broiler. Spread 1 tbsp mayonnaise on the bottom half of each bun. Place a leaf of lettuce, a fried chicken cutlet, and two tomato slices on each. Top with the bun crown and serve immediately.

    Cut the potatoes

    Peel the russet potatoes if desired. Using a mandoline or a sharp knife, slice the potatoes into very thin (about 1/8-inch) matchstick/shoestring strips.

    Soak to remove starch

    Place the cut potatoes into a bowl with 4 cups cold water. Soak at least 20 minutes (or up to 2 hours) to remove excess starch for crispness.

    Dry and dust

    Drain the potatoes and spread them on clean kitchen towels. Pat completely dry. Toss the dried fries with 1 tsp cornstarch to help them crisp, then season lightly with 1 tsp salt and 1/2 tsp black pepper.

    Heat oil and fry

    In a deep skillet or pot, heat about 2 cups vegetable oil to 350°F (175°C). Fry the shoestring fries in small batches, 1.5–2 minutes per batch, stirring gently until golden and crisp. Remove with a slotted spoon and drain on paper towels. Immediately season with a little extra salt if desired.

    Serve the fries hot alongside the crispy chicken sandwiches. Provide ketchup or your preferred dipping sauce.
