    Prepare mangoes

    Wash mangoes, peel with a knife or vegetable peeler, and cut flesh away from the pit. Dice the flesh until you have about 2 cups of diced mango.

    Make simple sweetener (optional)

    If mangoes are very sweet, skip or reduce sugar. For even dissolution, stir 2 tablespoons sugar into 2 tablespoons warm water until dissolved. Let cool to room temperature. (If you prefer no added sugar, omit this step and adjust to taste.)

    Blend

    Place the diced mango, 1 cup water, dissolved sugar (or 2 tbs sugar directly), 1 tablespoon fresh lime juice and a pinch of salt into a blender. Blend on high speed until completely smooth, about 45–60 seconds. Stop and scrape down the sides once if needed.

    Adjust consistency and sweetness

    Taste the juice and adjust: add up to 1/2 cup more water for a thinner juice, or additional sugar (1 tsp at a time) if more sweetness is desired. Blend briefly after adjustments to combine.

    Strain (optional)

    For an ultra-smooth juice, pour the blended mango through a fine-mesh sieve into a pitcher, pressing with the back of a spoon to extract as much liquid as possible. Discard remaining fiber. If you prefer a pulpy juice, skip this step.

    Chill and serve

    Fill glasses with ice cubes. Pour the mango juice over the ice. Garnish each glass with a mint leaf if desired. Serve immediately.
