Prep
Soak or cook noodles
If using rice stick or flat rice noodles: soak in warm water 10–15 minutes until pliable, then drain. If using bean thread (glass) noodles: soak in warm water 8–10 minutes until just softened, drain. Alternatively, follow package instructions for a brief boil then drain. Set aside separated so they don't clump.
Peel and mince garlic. Peel and thinly slice shallot. Thinly slice pork loin across the grain into bite-sized slices. Season sliced pork lightly with 1/4 tsp salt and a pinch of pepper. Measure and prepare garnishes: rinse bean sprouts, slice green onions, chop cilantro, and crush peanuts coarsely. Reserve crispy wonton strips.
Broth
Build the flavor base
Heat 1 tablespoon vegetable oil in a medium pot or Dutch oven over medium heat. Add minced garlic and sliced shallot and sauté 1–2 minutes until fragrant and translucent but not browned.
Add dry red chili flakes and 1–2 tablespoons Thai chili paste (or chili garlic sauce). Stir 30 seconds to bloom the spices and paste in the oil.
Pour in 6 cups chicken stock and 2 cups water. Stir to combine and bring to a gentle simmer.
Season the simmering broth with 2 tablespoons soy sauce, 1 tablespoon fish sauce, 1 tablespoon tamarind concentrate (or lime+rice vinegar substitute), 1 tablespoon brown sugar, and an optional 1/2 teaspoon additional sugar if needed. Taste and adjust: it should be a balance of salty, sour, sweet, and spicy. Simmer 6–8 minutes to marry flavors.
Cook Proteins
In a separate skillet over medium-high heat, add a small drizzle of oil. Add ground pork, season with 1/4 tsp salt and 1/8 tsp pepper, and cook, breaking up with a spoon, until no longer pink and starting to brown, about 5–6 minutes. Transfer cooked ground pork to a plate and keep warm.
In the same skillet (add a touch more oil if needed) sear the thinly sliced pork briefly 30–60 seconds per side until just cooked through — do not overcook. Slice pieces into bite-size if needed and set aside. (Alternatively, you can slide the sliced pork directly into the simmering broth for 1–2 minutes to poach — either method is fine.)
Assemble Noodles & Finish Soup
Bring the broth back to a gentle simmer. Add the drained noodles to the pot to heat through: for soaked rice noodles or flat noodles, simmer 1–2 minutes; for bean thread noodles, 1 minute is usually enough. Stir gently so noodles separate.
Return cooked ground pork and sliced pork to the pot to warm for 30–60 seconds. Taste broth and adjust seasoning: add more fish sauce for saltiness, more tamarind or lime for brightness, more chili paste for heat, or a pinch of sugar to balance.
Turn off heat and stir in 1 teaspoon sesame oil (and 1 teaspoon chili oil if using) for aroma.
Serve & Garnish
Ladle noodles, broth, sliced pork, and ground pork into individual bowls.
Top each bowl with about 1/2 cup bean sprouts, a sprinkle of sliced green onions, 2 tablespoons chopped cilantro, 1–2 tablespoons crushed roasted peanuts, and a handful (about 1/4–1/3 cup) of crispy wonton strips.
Serve immediately with lime wedges on the side for squeezing, and offer extra chili oil or chili flakes at the table.
