Boil water
Bring 4 cups of water to a rolling boil in a medium pot over high heat. Add 1 tablespoon kosher salt to the water (this seasons the pods).
Cook edamame
Add 1 cup frozen edamame (in pods) to the boiling salted water. Return to a boil, then cook uncovered for 4–5 minutes until pods are tender but still slightly firm. For firmer texture, cook 3–4 minutes; for softer, 5–6 minutes.
Drain and shock
Drain edamame in a colander and immediately rinse briefly under cold running water or transfer to an ice bath to stop cooking. Drain thoroughly and set aside in the colander to remove excess water.
Spicy Sauce & Finishing
Prepare sauce
In a small bowl, whisk together 1 tablespoon light soy sauce, 1 teaspoon toasted sesame oil, 1 teaspoon gochujang (or sambal oelek), 1 teaspoon rice vinegar, 1/2 teaspoon mirin or a pinch of sugar, 1 grated garlic clove, and 1/2 teaspoon grated fresh ginger until smooth and uniform. Adjust heat by adding more gochujang or sambal if you prefer spicier.
Toast red pepper flakes and sesame seeds (optional)
Heat 1 teaspoon neutral oil in a small skillet over medium heat. Add 1/2 teaspoon red pepper flakes and 1 teaspoon sesame seeds; toast, stirring, for 30–60 seconds until fragrant but not burnt. Remove from heat.
Combine edamame with sauce
Transfer the drained edamame to a large bowl. Pour the prepared spicy sauce over the warm edamame, add the toasted oil with pepper flakes and sesame seeds, and toss vigorously so the pods are evenly coated. The warmth helps the flavors adhere to the pods.
Season and finish
Taste one pod and finish by sprinkling 1/4 teaspoon coarse sea salt (or to taste), 1/8 teaspoon freshly ground black pepper, 1/2 teaspoon fresh lime or lemon juice (optional), and 1 tablespoon thinly sliced scallion. Toss lightly to distribute.
Serve
Transfer to a serving bowl. Serve warm or at room temperature. To eat, squeeze or pop the beans from the pods into your mouth and discard pods.
