Kofta Mixture

Method

Preparation of Kofta

    Mix the Meat

    In a large mixing bowl, combine the ground beef and ground lamb. Ensure they are well mixed.

    Add Aromatics and Spices

    Add the finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, black pepper, and cinnamon to the meat mixture. Drizzle in the olive oil and mix until all ingredients are evenly incorporated.

    Form the Skewers

    Divide the mixture into equal portions and shape each portion around a skewer, flattening it slightly to form a long, oval shape. Repeat until all the mixture is used.

    Chill the Skewers

    Place the skewers on a plate and chill in the refrigerator for at least 30 minutes to firm up the mixture and enhance the flavors.

Smoking the Kofta

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) and add your choice of wood chips (such as hickory or mesquite) for smoking.

    Smoke the Kofta

    Once the smoker is ready, place the kofta skewers on the grill grate. Close the lid and smoke for about 1 to 1.5 hours, or until the internal temperature of the meat reaches 160°F (71°C).

    Rest and Serve

    Remove the skewers from the smoker and let them rest for 5 minutes before serving. Enjoy your smoked kofta with pita bread, yogurt sauce, or your favorite sides.
