Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine Greek yogurt, olive oil, minced garlic, lemon juice, paprika, ground cumin, salt, black pepper, and cayenne pepper. Mix well until smooth and thoroughly combined.

Chicken Preparation

    Marinate the Chicken

    Add the chicken thighs to the marinade in the bowl. Ensure each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.

Skewering and Smoking

    Prepare the Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken thighs onto the skewers, leaving some space between each piece. If using vegetables, alternate the chicken with bell pepper, red onion, and zucchini pieces on the skewers.

    Smoke the Kebabs

    Preheat your smoker to 225°F (107°C). Place the skewers in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature of the chicken reaches 165°F (74°C).

Serving

    Serve the Kebabs

    Once done, remove the kebabs from the smoker and let them rest for a few minutes. Serve warm with your favorite sides or sauces.
