Pita Bread Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Pour in the activated yeast mixture and olive oil. Stir until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pitas

    Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a ball, then flatten each ball into a disc about 1/4 inch thick.

    Cover the discs with a cloth and let them rise for another 30 minutes.

    Cook the Pitas

    Preheat a skillet or a baking stone over medium-high heat. Cook each pita for about 2-3 minutes on each side until puffed and lightly browned.
