    Prepare the Lamb Belly

    Start by rinsing the bone-in lamb belly under cold water to remove any impurities. Pat it dry with paper towels.

    Season the Meat

    In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the lamb belly, making sure to cover it evenly. Allow the seasoned lamb to sit at room temperature for about 30 minutes.

    Preheat the Oven

    Preheat your oven to 150°C (300°F).

    Sear the Lamb Belly

    Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the lamb belly, skin side down, and sear it for about 5-7 minutes until the skin is golden and crispy. Flip the lamb belly over and sear the other side for an additional 5 minutes.

    Roast in the Oven

    Transfer the skillet to the preheated oven and roast the lamb for about 2 to 2.5 hours, or until the meat is tender and easily pulls away from the bone. Check periodically and cover with foil if it starts to brown too much.

    Once cooked, remove the lamb belly from the oven and let it rest for about 15 minutes before slicing.
