    Prepare the Tuna Collar

    Preheat your grill or broiler to medium-high heat. Lightly season the tuna collar with salt and pepper. Once heated, place the collar on the grill or under the broiler and cook for about 6-8 minutes per side, or until the fish is cooked through and has nice grill marks.

    Make the Ponzu Sauce

    In a small bowl, mix together the ponzu sauce and the juice of half a lime. Set aside for serving.

    Prepare the Wasabi

    In a separate small bowl, place the wasabi paste and add a small amount of water to achieve your desired consistency. Adjust to taste.
