Prepare Takoyaki Batter
In a mixing bowl, combine the all-purpose flour, dashi stock, eggs, soy sauce, and chopped green onions. Mix until smooth.

Preheat Takoyaki Pan
Preheat a takoyaki pan over medium heat and lightly grease it with oil.

Cook Takoyaki
Pour the batter into each mold, filling them halfway. Add diced octopus, shredded cheddar cheese, and a sprinkle of bonito flakes into each mold. Top with more batter to cover.

Flip and Cook
Cook for about 3-4 minutes or until the bottom is golden brown. Use skewers or chopsticks to flip each takoyaki ball and cook for another 3-4 minutes until golden and crispy all around.

Serve
Remove from the pan and serve hot, garnished with additional bonito flakes and a drizzle of your favorite sauce, if desired.
