Prepare the Mixture

In a large mixing bowl, combine the ground chicken, soy sauce, mirin, minced garlic, minced ginger, chopped green onion, cornstarch, salt, and pepper. Mix until well combined.

Form the Meatballs

Wet your hands slightly to prevent sticking and form the chicken mixture into small meatballs, about 2-3 inches in diameter.

Skewer the Meatballs

Insert a skewer through the center of each meatball, making sure it goes through the entire ball for stability.

Cook the Meatballs

Preheat a grill or grill pan over medium heat. Cook the skewered meatballs for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.

Serve

Arrange the tsukune on a serving plate, drizzle with additional soy sauce if desired, and sprinkle with chicken skin furikake. Serve with soft-boiled or soy-marinated eggs on the side.
