In a large bowl, combine ground pork, chopped green onion, minced garlic, grated ginger, soy sauce, mirin, salt, and black pepper. Mix well until all ingredients are combined.

Form the mixture into small balls or logs, roughly the size of the shishito peppers.

Carefully make a slit down the side of each shishito pepper without cutting all the way through.

In a bowl, mix sour cream, chopped roasted shishito peppers, lime juice, and salt to taste until smooth and well combined.

Heat a grill or skillet over medium heat. Cook the stuffed shishito peppers for about 3-5 minutes on each side until the pork is cooked through and the peppers are slightly charred.
